Ingredients
For the Filling:
• ½ cup (120ml) smooth natural peanut butter
• 2 tbsp (30ml) maple syrup
• ¼ – ⅓ cup (25–35g) fine almond flour
• ⅛ tsp salt
For the Coating:
• 7 oz (200g) dark chocolate (60–70% cocoa)
• 2 tsp (10ml) coconut oil
Directions
1. Line a muffin pan with paper liners, or place liners on a tray.
2. In a bowl, mix peanut butter, maple syrup, ¼ cup almond flour, and salt until a stiff paste forms. Add more almond flour if needed. Chill for 15 minutes until firm enough to shape.
3. Scoop heaped teaspoons of the filling, roll into balls, and flatten into small discs slightly smaller than your liners.
4. Melt the chocolate and coconut oil together until smooth. Spoon 1 tsp of chocolate into each liner, spreading it across the base and up the sides.
5. Place a peanut butter disc into each liner and press gently. Top with more melted chocolate to cover completely.
6. Sprinkle with sea salt (optional) and refrigerate until set.

Store in the fridge for a week or keep in the freezer for a quick chocolate fix anytime. Just let them sit at room temp for a few minutes before eating — if you can wait that long.
