Ingredients
• 1 cup creamy nut butter (like Almond or Peanut)
• ½ cup coconut sugar
• ½ cup maple or agave syrup
• 2 tsp vanilla extract
• 1 ¼ cups almond flour
• ¼ cup tapioca or gluten-free all-purpose flour
• 1 tsp baking powder
• ¼ tsp salt
• ½ cup dairy-free chocolate chips or chunks
• Flaky sea salt (to finish)
Directions
1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
2. In a mixing bowl, beat together nut butter, syrup, vanilla, and coconut sugar until smooth.
3. Add in almond flour, tapioca (or GF flour), baking powder, and salt. Mix until just combined.
4. Fold in chocolate chips or chunks.
5. Roll dough into 1-inch balls and place on prepared tray.
6. Bake for 13–15 minutes, until lightly golden and set.
7. Cool on tray for a few minutes, then transfer to a wire rack.
8. Sprinkle with flaky sea salt and enjoy!
Pro Tip:
For extra gooey cookies, slightly underbake and let them firm up as they cool. Want crunchier edges? Leave them in for a minute or two longer.
